This is one of my favorite things. They rave about One-Point Chili at WW (blech), but this is my one-point fav. I don't like the carrots in it, so I just add more zucchini, and I add more salsa. Both are 0 points, so it doesn't change anything. You can control the "heat" with the type of taco seasoning you use. I divide it up and freeze it.
WW TACO SOUP
1 (15 oz.) can diced tomatoes
3 cans vegetarian or chicken broth
1 can black beans, rinsed and drained
1 can fat-free refried beans
1/2 cup salsa
2 Tbsp. taco seasoning
1 can fat-free turkey chili
1 cup chopped zucchini
1 cup diced carrots
1 (4 oz.) can chopped Ortega chiles
Garlic to taste
Saute onion and garlic in pan sprayed with Pam. Add everything else and simmer until vegetables are tender.
1-1/2 cups = 1 point

Hey, he can take this soup in a crock pot to keep it warm, that way he's got something he can eat.
For a couple of extra points, I've added shredded low-fat cheese and/or crushed baked Doritos. Yum!
